The Baking Process
The key to maximising functionality of the baking powder or leavening system is controlling the carbonate/acidulant reaction. Making sure the gas is released when needed, rather than too early or too late, you make sure all available gas is utilised to lift and inflate the baked good. Kudos Blends recognises the various stages in the baking process which determine the leavening requirements of the baking powder.
There needs to be little or no baking powder reaction during mixing and holding but during the baking stage all the gas needs to be produced – inflating and expanding the starch structure.
