At the Fi European Salt Reduction Conference 2011, Dinnie Jordan, Founder of Kudos Blends, delivered a lecture on salt reduction to the leading food manufacturers across Europe.
The lecture focused on reducing the salt content of baked products by 50% and improving their taste, texture and usability. Dinnie also spoke about the importance of balancing chemistry and blending technology to achieve optimum ingredient performance.
‘High salt intake has recently become a huge health issue with international medical bodies as well as Government departments setting targets for reducing salt in our diets for health reasons. Our range of low-salt baking powders reduces what is quite often seen as the ‘hidden’ salt content of many consumer food products, helping manufacturers to deliver a healthier product without compromising on quality.’
