KUDOS™ Potassium Bicarbonate
KUDOS™ Potassium Bicarbonate has been developed specifically as a sodium free alternative carbonate option for bakery applications, either for use as a single ingredient (in the case of biscuits and crackers) or in combination with normal food acids (for sweet baked products).
Sodium reduction in baked goods can be achieved by up to 50%, without compromising the product quality, volume, taste or texture.
Kudos Blends has developed a number of grades for the bakery industry with different particle sizes, depending on application. Fine particle size is essential to prevent unacceptable speckles from appearing in the baked good.
